eye-2Yellow color is quite deep and shaded with nice green glints. The effervescence, very thin, is coming up softly and regularly in order to provide a light ring of bubbles in surface.
nose2The olfactory impression is intense. Some tastes of Mirabelle, honey, hot brioche and melted butter are noted. After aeration, the nose becomes more complex. Some hot spices, exotic fruits and a small touch of toffee are felt.
mouth1This Blanc de Blancs highlights its sincere character, typical of the year. However, the freshness is present all along the tasting. The expression keeps its balance. Even if, it has a small dose (6,5 gr/l), the wine offers an unctuous texture until the end. Acidulous and fruity, it finishes by a chalky note.
forkDue to its characteristics, it will be welcomed with hot dishes cooked with sea products. Try it also with fishes with melted butter, gratin of shellfishes, Saint Jacques…

eye-2This wine has a pure yellow golden color with green glints which underlines the youth-fulness and the presence of an important proportion of black grapes in the blending. The effervescence is lively, impressive and creates small bubbles.
nose2The first olfactive impression is noted. Some feelings of lemon, apple and white pepper are coming out subtly. Then, few seconds later, we could feel some white flowers (like jasmine), fresh almond on a vegetal aspect very fresh and especially
delicate.
mouth1Flavor in the mouth is sharp, the effersvence is blended in the wine. It is on the very beautiful acidity of champagne that the second part of the tasting will be organized. The taste is liveland, pure and the balance sugar – acidity is marked by a moderate dose. Accompanied by a delicate winy taste, the taste remains right and strained until the end.
forkFinally, we advise you toserve this wine with soft dishes, marine and salted ones, with firm textures and nice origins (purity). We suggest: filet of seabass for example.

eye-2The Champagne reveals a singular and strong raspberry pink hue, with ruby red highlights and violet shades. His delicate foam is powered by very fine and light bubbles that feed delicate cordon round the edge of the glass.
nose2First nose is delightfully embodied by red heady rose scent, mingled with scents of raspberry cream, peppermint. When aerated it evolves towards greedy notes of pomegranate, pink grapefruit, cherries.
mouth1The approach in the palate is soft and fresh with a creamy effervescence.
The Champagne develops into silky and round density of ripe red and black fruits with a tender caress of floral scent. Balance is sustained thanks to fresh acidity and a clay-limestone minerality giving vinosity precision. Champagne finishes with fruity richness and floral delicacy providing us plenty of positives sensual vibrations.
forkCuvée Blanc de Rosé is seducer Champagne that will be a guest for your one to one romantic moments as well as greedy and spicy foods. It can be served at temperatures from 9°C to 11°C (48, 2°F to 51, 8°F) with our following suggestions of culinary pairings : sardines, red mullet baked in oiled foil, violet artichokes and fennel Tuna unilateral cooked.

eye-2This Champagne has a deep golden color. It expresses the beginning of maturity for this wine. The effervescence, very quiet creates very thin bubbles coming up softly and regularly in order to provide a light ring of bubbles at the surface.
nose2First olfactive impression is subtitle. Some feelings of fruit like apple, pears and spices aromas like vanilla or honey are coming out progressively. After aeration, the nose becomes more complex. Undergrowth, mushroom, bread, cocoa give all its complexity to this champagne.
mouth1The first flavor in mouth is sharp, you feel directly the acidity. But the effervescence is well blended in the wine giving it a creamy and round impression. So the finish is unctuous and soft.It has a long length in mouth and reveals notes of dried fruits and praline.
forkWe advise you to serve this wine around 12-13 °C in a rounded glass to express all his flavours. Ready to drink now it can also age for 5 to 6 more years. The perfect association with food is dishes lobster, Salmon or foie gras.

eye-2Yellow-lemon color with green glints is intense and declares a mature and adult wine. The effervescence is soft and composed of small bubbles providing a light white string.
nose2First nose confirms the visual sensation, melted butter, candied pomelo and cooked honey.
mouth1The flavour in the mouth is soft and accompanied by a subdued effervescence.
In the mouth, the honey dominates and the freshness is balanced with just enough vinosity without heaviness.
Neither the effervescence, ratherdiscreet, nor the dose, just perceptible will trouble this nature. At the end, this freshness reappears and also a good minerality and some notes of candied citrus fruit. The aromatic persistence is very interesting (8 seconds) and adds to the strained character of the wine.
forkBecause of acidity and the minerality of the wine, it should be served with sea products. In order to accentuatethe creamy texture and the mature aromas of the wine, choose creamy or butter sauces to accompany the dishes.

eye-2The golden pale color with green reflection, expresses a very rich and fresh wine. The Carte Noire is pointed out by a delicate effervescence making a small necklace at the top of the glass.
nose2First olfactive impression is quite fresh and uncluttered. It brings up aromas of green apple, iodine, limestone. After a few seconds, the nose is becoming deeper and evolves toward notes of pineapple, yellow peach, mandarin peel or marshmallow.
mouth1In the mouth the approach is fresh and supple. You will appreciate the creamy and melted effervescence and the mineral, citrus fruits and salted aromas of this wine.
forkThis Champagne is the true expression of the Terroir. We suggest serving it at 8 or 9°C with oysters, Japanese sashimi or sea food in general.

eye-2The Blending 100% Chardonnay gives to this Ratafia Champenois unique characteristics such as a bright yellow color and freshness. It also symbolizes a revolution in the making process of Ratafia.
nose2The first nose brings a note of candied lemon. If you leave it to breathe you will then smell nut aromas.
mouth1In mouth you feel the sugar and alcohol more intensively. This will bring all its richness to the liquor. The final notes will be towards laurel, and underwood.
forkIt is wonderful to be drank with foie gras, raw salmon or associated with deserts, especially dried fruits deserts or to accompany white flesh fruit such as pear or peach.

eye-2This Ratafia is unusual by its colour and aromas. It is far from the usual fruity flavours. It has a deep mahogany color with copper reflections.
nose2The nose confirms the color richness and maturity. We can smell quince, cocoa, dried fruit note like nuts. By aerating your glass, aromas of spices will appear especially cinnamon and liquorice and finally cherry brandy or dark chocolate.
mouth1In mouth you will feel caramel, cashew nut and pastry cream flavours with a touch of freshness. It is a Ratafia with smooth texture and high aromatic complexity, well balanced and extremely seductive.
forkIt will suit perfectly a foie gras, or for example game meat with dried fruits, fat cheeses such as munster, maroille and all kind of dessert!

eye-2The purple colour of this ratafia is intense. Extremely deep, the colour is also ponctuates with red refections.
nose2The first olfactive impression is intense. We notice plum jam aromas, prune and black cherry. After a few seconds, blackberries, rasberries and cacao aromas emerge.
mouth1This ratafia breaks the received ideas about ratafia. With its colour almost black, the ratafia pinot noir offers an exceptional intense and franc aromatic expression.
forkIt a very atypical ratafia, ready to take up any meal challenges : chocolat or red fruits dessert, blue cheeses…

The Pinot noir ratafia can’t be named “ratafia champenois”. Since 2015, the rules of ratafia champenois production have changed. A ratafia produced with a skin contact maceration doesn’t respond to the new specifications set for ratafia champenois production.
